Chocolate Lava Cake

Ingredients

  • 62 grams chocolate buttons (1/3 cup)
  • 62 grams unsalted butter (1/3 cup)
  • 1 egg
  • 1 egg yolk
  • 30 grams sugar (1 1/2 tablespoons)
  • 5 grams flour (1 heaped teaspoon)

Method

  1. Place chocolate and butter in a bowl over a pot of simmering water to melt butter and chocolate, whisk to combine.
  2. In another bowl add egg, yolk and sugar, whisk until foamy.
  3. Once chocolate mixture has melted, remove from heat, stir then add to egg mixture and stir.
  4. Add flour, stir to combine, and then pour into individual buttered and lightly floured aluminium moulds.
  5. Refrigerate for 1 hour or up to 6hrs.
  6. Bake in pre heated 200 degree oven for 8minutes, remove from oven then rest for 5minutes and serve warm.

Note: Moulds are best if they are individual aluminium ramekins. However, teacups work well and some individual ceramic ramekins. You will have to adjust your cooking time. Teacup moulds usually take 12-15minutes at 200 degree fan forced
